Custom Exported Reports for KPI measurement

The exported reports in PH are good but they lack the ability to produce customised specific reports and they are generic. This way we can measure things like: What products are our clients buying? What is our yield per minute/hour? How well does each practitioner sell each product? Attached is the data I would like to be able to export without extensive manual editing of excels.
